Here’s a recipe for those who may be watching a WDP 2021 service from the comfort of their homes via Zoom, Facebook Live or another internet platform.
Coconut Mug Cake
2 tablespoons soft margarine
1 tablespoon water
½ teaspoon vanilla or coconut flavouring
2 tablespoons sugar
⅛ teaspoon salt
2 tablespoon unsweetened coconut
¼ cup all-purpose flour
¼ teaspoon baking powder
In a large mug, beat the egg well with a fork. Mix in the margarine until it is the size of beans. Mix in the water, vanilla, sugar, salt and coconut. Scoop flour on top and stir baking powder into it before stirring both into batter. Microwave for 1:30 to 2:00 minutes or until an inserted toothpick comes out clean.
If desired, top with toasted coconut, chopped fruit, whipped cream or ice cream.
